White Star Bar, New York

Sasha Petraske’s latest venture veers from the Milk and Honey template. Cocktails are not the focus here, rather spirits – and, in particular, absinthe. The potent liquid is served with sugar and water in the traditional fashion; they also serve a range of aperitifs. It’s niche to be sure but Petraske is not without experience in the business. The space is attractive, full of the white star lanterns from which it takes its name, and the staff are nattily attired. It’s not the place to head if you want a cocktail, but in terms of atmosphere and style – Petraske’s other establishments have that covered – but if you’re after something different, this may well appeal.

PJ Clarke’s, New York

PJ Clarke’s has a whole load of history under its belt. A constant in an ever-changing neighbourhood, this well-worn saloon bar has become something of a Manhattan institution and flaunts its jukebox, its old fashioned (and out of order) payphone and its cigarette machine like memorabilia of a long gone age. The interior, while having been subject to recent refurbs and additions, has not lost any of its historic charm and the place still exudes an undiluted New York charm. The kitchen meanwhile serves up classic American grub - clam chowder, awesome burgers and home fries as well as steaks in all their myriad meaty forms. Food is served until 3am in order to keep the city that never sleeps ticking over until their breakfast bagel.

Per Se Restaurant, New York

Per Se, Thomas Keller's “urban interpretation” of his French Laundry in California, has changed its menu every day of its nearly eight years – that's something like 30,000 different dishes, some re-introduced from prior seasons but continuously refined.
Per Se, the much-anticipated restaurant from renowned chef Thomas Keller, debuted in February 2004 in the Time Warner Center complex at Columbus Circle. With striking views of Columbus Circle and Central Park, the dining room is a rare blend of open space and easy intimacy, discreet drama and understated luxury. Offering a 64-seat dining room, a 10-seat private dining room, a lounge, a bar and wine cellar, all presented in a palette of warm neutrals and natural elements, Per Se will refine and redefine the dining experience.

For dinner, Per Se offers two prix fixe tasting menus for $295; a 9 course Tasting of Seasonal Vegetables or the 9 course Chef’s Tasting Menu, which changes daily. For lunch, in addition to the two 9 course menus, a shorter 5 course menu is available for $185.
With three Michelin stars it has succeeded as much by consistency as by creativity and remains one of the US's true destination restaurants.
